Description

 

Panero Business SRL, a newly established bakery in Bucharest-Ilfov, Romania, is the focus of this project. Founded in 2021, this small bakery primarily sells bread and pastry products through its shop. The project''s primary objective is to expand the bakery''s production capacity. It seeks to achieve this by addressing two key issues: first, the company aims to adopt more environmentally friendly practices, such as the use of electric ovens, to reduce its environmental impact. Second, it intends to enhance product quality and quantity by sourcing high-quality ingredients and better aligning with market demands.

The project aims to bolster Panero Business SRL''s competitiveness in the bakery sector by expanding its production capacity. This expansion project involves acquiring specialized equipment to manufacture a diverse range of bakery products, including Sourdough bread, Cornbread, Pave Bread, and various pastry items.

The new project aims to build upon the outcomes and outputs of the previous project through value creation and mainly by introducing controlled atmosphere packaging for products and obtaining HACCP certification for improved market operation. The additional aspect is driven by the need to diverisify the sales channels and introduce new products. Upon implementing this extended project, the business will operate a compact and integrated production facility, enabling artisanal production and professional packaging of items like sandwiches and pastries for resale.
 

Summary of project results

The Applicant aimed to increase company competitiveness by extension of production capacity in bakery field. The company proposes an investment project which consists in acquiring equipment for production and sale of bakery products: Sourdough bread, Cornbread, Pave Bread,  Bread with Potatoes, Onion, Olives, Rye, Seeds, Wholemeal and black flour bread, Small products: buns, mini baguettes, chiabatta for sandwich, pita, Sourdough baguette, pastry products. 

1. Investment activity
The company acquired the following pieces of equipment: bakery water chiller, automatic dough divider, automatic rounder, bread forming molder, blast chiller, bakery oven hood, pastry oven hood, washer with battery tank, stainless steel work table with shelf, stainless steel trolleys for cooling bread, box leavened dough, bread crates, bread leavening baskets.
As a result of extension of production capacity, the company opened a second selling point in Bucharest-Ilfov region which required acquisition of equipment and shelfs for the new shop: washer with battery tank, stainless steel work table with shelf, fire extinguishers, commercial furniture & shelf, tax register machine & management software, outdoor led signboard, TV (for prices and products display), antibacterial linoleum, UW Insect lamp.


 

  • Estimated annual growth in turnover: 309% at the end of 2024 compared to baseline year 2021: In progress – at the end of 2021 the Promoter had registered a turnover of 466KRON, while at the end of 2022 the figure was of 1.094 KRON, and for 2023 they expect that the figure will  be close to 1.200KRON. It is to be mentioned that the 2023 result do not encounter the effect of the new bakery – that is going to be open in January 2024.
  • Estimated annual growth in net operational profit (EBIT): 393% at the end of 2024 compared to baseline year 2021: In progress – at the end of 2023 the Promoter estimates that the Operational profit to be of ~ 170KRON, being by ~20% over the figure registered in the previous year.
  • Creation of new jobs: 3: Although the new production facility/bakery is going to be opened in the near future, currently the Promoter has 6 employees, compared to an average number of employees of 5 in 2022 and 4 in 2021. Nowadays they are in a recruiting campaign for employees to be allocated to the new facility, so their estimation is that they will fulfill this criterion, as well.
  • Estimated annual decrease of CO2emissions / equivalents: 27,6 tonnes of CO2 at the end of 2024 compared to baseline value of 7 tonnes for 2021: In progress – after starting production in the new facility the Promoter will have a clearer measurement of power consumption and thus the CO2 emissions related to that power.
  • Innovative technologies/processes/solutions applied: 1: In progress – the Promoter has searched into the market and found equipment of relatively small capacities (because we do not want to be a bread factory) that are fitting one with each other and they will combine modern technologies with artisanal / traditional recipes, e.g. bread made from dough with slow leavening manufactured and baked with the help of new equipment.
  • Measures implemented to decrease CO2-emissions: 1: In progress – after starting production in the new facility the Promoter will have a clearer measurement of power consumption and thus the CO2 emissions related to that power
