Drew-Kon operates a tourist centre in the ecologically pristine area of Tuchola Forest. We intend to expand that activity by opening a mini-brewery at that centre. The current brewing market trends promote healthy, fresh products manufactured using traditional technology. Under the project, a beer production technology will be developed according to specially created beer recipes based on pilsner barley malt with the addition of caramel, dark and colouring malts, as well as wheat, rye or oat malts. The production will be based on raw materials found only in the Tuchola Forest area, and will use traditional and environmentally friendly production technologies, under the so-called CLEAN LABEL. In order to launch the production, we will build a mini-brewery powered by renewable energy sources (photovoltaic installation, heat pumps and recuperation). Within the facility, an innovative technological line will be installed combining traditional technological solutions with an automated processing system ensuring repeatability and continued availability with variable production volumes. It is a system that allows for natural derivation of semi-finished products, while maintaining high taste and aroma parameters, shelf life and health benefits. As a result of the project implementation, annual electricity consumption will be reduced by 0.02 GWh, and annual CO2 emissions - by 52.95 tons.
Summary of project results
The implementation of the project contributed to the satisfaction of the expectations expressed by the beneficiary''s customers, which are related to the broadly understood tourist offer. The tourist services provided by the applicant were expanded to include the production and sale (commercialization) of a local product - 3 types of beer with health-promoting properties. The production process takes place on a partially sunken floor, in the basement due to the specificity of production. The technology is based on complete automation in a closed system. The project contributed to the increase in the competitiveness of Drew – Kon Sp. z o. o. on the local market of tourist services.
As a result of the project, a production line for the production of Fojut beers was purchased and launched, based on regional raw materials endemic to the investment area, taking into account environmentally friendly and traditional production technologies, the so-called "CLEAN LABEL" made based on original recipes. The technological line allowed the launch of the production of three innovative products, i.e. 1. Fojutowskie Bright Beer - the innovation is a combination of Pilsner malt and wheat malt flavored with kiln (not smoked) natural pine oil from the Tuchola Forest. 2. Piwo Fojutowskie UL - the essence of the innovative recipe is to obtain wild yeast during the growing season of plants from the family ecosystem of native fields, orchards, meadows and forests of the Tuchola Forests. 3. Piwo Fojutowskie Zielarz - the innovation is a combination of Pilsner malts with a specially selected mixture of herbs, coming exclusively from the Tuchola Forest. The result of the project is also the implementation of eco-innovation, understood as significant and visible progress towards achieving sustainable development by reducing the negative impact on the environment, increasing resistance to environmental burdens or achieving more effective and responsible use of natural resources. The eco-innovation aspect of the task concerns the use of an innovative cooling system for fermentation tanks, i.e. vertical cylindrical-conical tanks used in the beer brewing and maturation process. The renewable energy source, which is a heat pump, was used twice in the technological process, i.e. for heating (central heating, domestic hot water, central heating) and for cooling in the beer maturation process. The entire system is supplemented with power from a photovoltaic installation with a power of up to 50 kW. Thanks to this solution, the project is characterized by process (complementary) innovation on a national scale.
The recipients of innovative products are (external) clients of the Fojutowo Tourist Center, who can be divided into two groups:
- Individual clients - private individuals from all over Poland and Europe who use the attractions of the Fojutowo tourist complex and spend time with their families, enjoying the natural values ​​of the Tuchola Commune, and also organize private group events (weddings, anniversaries, meetings, etc.).
- Institutional clients - companies and institutions from all over Poland that organize training, conferences, integration events and employee holidays.
Customers of the Fojutowo resort received, first of all, a professional and diverse tourist service, provided with the highest standards in this area within one tourist and recreation complex. As a result of the project, an increase in tourist traffic is expected in the autumn and winter period, which will have a positive impact on eliminating seasonal sales fluctuations.
