Drew-Kon operates a tourist centre in the ecologically pristine area of Tuchola Forest. We intend to expand that activity by opening a mini-brewery at that centre. The current brewing market trends promote healthy, fresh products manufactured using traditional technology. Under the project, a beer production technology will be developed according to specially created beer recipes based on pilsner barley malt with the addition of caramel, dark and colouring malts, as well as wheat, rye or oat malts. The production will be based on raw materials found only in the Tuchola Forest area, and will use traditional and environmentally friendly production technologies, under the so-called CLEAN LABEL. In order to launch the production, we will build a mini-brewery powered by renewable energy sources (photovoltaic installation, heat pumps and recuperation). Within the facility, an innovative technological line will be installed combining traditional technological solutions with an automated processing system ensuring repeatability and continued availability with variable production volumes. It is a system that allows for natural derivation of semi-finished products, while maintaining high taste and aroma parameters, shelf life and health benefits. As a result of the project implementation, annual electricity consumption will be reduced by 0.02 GWh, and annual CO2 emissions - by 52.95 tons.
